What type of mushrooms are best for chicken and mushroom recipes?
You can really use any of your favorite mushrooms for these chicken and mushroom recipes, other than white mushrooms (unless you would like a super mild flavor). Some mushrooms are easier to find than others, such as cremini or baby Bella mushrooms. Cremini mushrooms are funnily known as the “middle child" mushroom. They are the most mature version of the more common white button mushroom and are heartier, earthier and overall, have the most flavor. They are also younger than the mature variety, the portobello, and that is why they are often called the “baby Bella” or “baby portobello” mushrooms. Once they reach about 4-6 inches in diameter, they are called a portobello. The younger cremini mushrooms have a deeper, savory flavor. Feel free to use other flavorful mushrooms such as portobello, shiitake, oyster mushrooms or more exotic mushrooms such as chanterelle, morel, enoki and king oyster mushrooms. You can even mix and match the different varieties of mushrooms.
Is white or dark meat better for chicken and mushroom recipes?
For the Chicken Breasts (white meat): There are a few ways to ensure you get moist, tender chicken. One way is to pound the skinless boneless chicken breasts till they are all the same thickness. This can be done in a Ziploc bag or between two sheets of saran wrap. This will ensure the chicken cooks at the same rate so it finishes at the same time. You can also pre-slice the chicken into bite-sized chunks/pieces. This ensures that the chicken cooks at the same time. For the Chicken Thighs (dark meat): You can also use boneless, skinless chicken thighs in many of these recipes. The dark meat will create extra moist, tender chicken.
How to know when chicken is fully cooked
You will need to use a meat thermometer to make sure the chicken reaches 160 degrees for white meat and 165 degrees for dark meat. You can also remove the chicken from the pan when it reaches 158 degrees. When letting the chicken rest, the chicken will continue to cook and redistribute the juices throughout the meat.
